Job Description:

We’re looking for an experienced Restaurant Manager to lead day-to-day floor operations and service delivery across Rotunda, Green & Fortune’s flagship restaurant, featuring live-fire cooking, an open-plan kitchen, a private dining room and intimate canal views. This is a hands-on leadership role for someone who thrives on the floor, enjoys building strong teams, and is passionate about delivering consistently high guest experiences.

Job Responsibility:

  • Lead the full restaurant service cycle, from pre-service preparation through to close-down
  • Be a visible floor leader, ensuring smooth service and strong guest flow
  • Maintain high standards of presentation and organisation across all FOH areas
  • Review bookings, VIP notes and running orders to ensure service readiness
  • Lead, motivate and develop the restaurant team, setting clear standards for service and professionalism
  • Support recruitment, onboarding and ongoing training of FOH staff
  • Deliver engaging pre-shift briefings and on-the-floor coaching
  • Plan rotas and resourcing in line with business needs
  • Plan labour in line with budgets and trading patterns
  • Monitor stock, consumables, wastage and shortages
  • Oversee stock takes and report variances
  • Maintain accurate menus, pricing and presentation
  • Work closely with kitchen, bar, events, café and management teams
  • Represent the restaurant operation in cross-department planning
  • Review pre- and post-service feedback to drive improvement
  • Act as a key point of contact for guest feedback and service recovery

Requirements:

  • Experienced Restaurant Manager or high-performing Assistant Manager from a high-volume, high-profile venue
