We’re looking for an experienced Restaurant Manager to lead day-to-day floor operations and service delivery across Rotunda, Green & Fortune’s flagship restaurant, featuring live-fire cooking, an open-plan kitchen, a private dining room and intimate canal views. This is a hands-on leadership role for someone who thrives on the floor, enjoys building strong teams, and is passionate about delivering consistently high guest experiences.
Job Responsibility:
Lead the full restaurant service cycle, from pre-service preparation through to close-down
Be a visible floor leader, ensuring smooth service and strong guest flow
Maintain high standards of presentation and organisation across all FOH areas
Review bookings, VIP notes and running orders to ensure service readiness
Lead, motivate and develop the restaurant team, setting clear standards for service and professionalism
Support recruitment, onboarding and ongoing training of FOH staff
Deliver engaging pre-shift briefings and on-the-floor coaching
Plan rotas and resourcing in line with business needs
Plan labour in line with budgets and trading patterns
Monitor stock, consumables, wastage and shortages
Oversee stock takes and report variances
Maintain accurate menus, pricing and presentation
Work closely with kitchen, bar, events, café and management teams
Represent the restaurant operation in cross-department planning
Review pre- and post-service feedback to drive improvement
Act as a key point of contact for guest feedback and service recovery
Requirements:
Experienced Restaurant Manager or high-performing Assistant Manager from a high-volume, high-profile venue
