The Bakery Manager will oversee both our 3rd shift bread production and 4am day shift pastry & dessert teams. This role combines leadership in both baking and administrative responsibilities, focusing on quality control, team training, inventory management, and the creation of new seasonal products. As we’ve recently purchased FlexiBake, the manager will also spearhead the integration of this software system, using it to streamline administrative tasks such as inventory management, ordering, and reporting. The role also includes coordinating the fulfillment of external orders for both online sales and local vendors, ensuring accuracy and timely delivery.
Job Responsibility:
Production Oversight: Supervise both the 3rd shift (10pm-6am) bread team and the day shift (4am-12pm) pastry, torte, and cookie decorating teams
Baking & Pastry Management: Participate in, train, and oversee the production of Bavarian-style breads, handmade pastries, and traditional Bavarian tortes
Sugar Cookie & Cake Decorating: Lead, train, and assist with the creative decoration of sugar cookies and cakes, ensuring quality and artistic presentation
FlexiBake Integration: Spearhead the integration of FlexiBake, our new inventory and order management system. Use the platform for inventory tracking, ordering, production scheduling, and reporting
Inventory & Ordering: Manage ingredient inventory levels, track orders, and ensure timely procurement using FlexiBake to streamline these processes
Team Development & Training: Train, mentor, and motivate staff, ensuring they are equipped with the skills and knowledge to succeed
Quality Control: Monitor product quality, ensuring all baked goods meet our established recipes and standards
Administrative Duties: Up to 40% of tasks may be administrative, including managing schedules, using FlexiBake for reporting, and overseeing daily operations
External Orders: Oversee the coordination of external orders, both online and from local vendors, ensuring orders are fulfilled accurately and on time
Collaboration & Innovation: Work closely with our retail, kitchen, and dining room management teams to develop new seasonal products and drive innovation in the bakery
Requirements:
Degree or formal training in Baking & Pastry Arts or Culinary Arts preferred
equivalent experience considered
3+ years professional bakery experience
High-volume commercial bakery preferred
Strong hands-on baking skills with knowledge of scratch baking, artisan breads, pastries, and cake decorating
Ability to train, coach, and develop team members on technique, quality, and consistency
Proven managerial experience in a bakery or food production environment
Experience with inventory management systems or the ability to quickly learn new software (experience with FlexiBake is a plus)
Strong organizational and time-management skills, with the ability to balance both production and administrative duties
Strong communication skills for collaborating with staff, vendors, and guests
Ability to work flexible hours, overseeing both day (4am-noon) and overnight (10pm-6am) shifts
