The Department of Corrections is looking for a detail oriented dietary professional with both a strong professional and food operations background. The ideal candidate will serve as the principal dietary manager at the Correctional Center and help to ensure that all dietary standards are upheld and complete.
Job Responsibility:
Plans, develops, coordinates, and directs all phases of the food services program for the facility
Serves as full line supervisor
Coordinates food storage, menu, and supply needs
Directs the preparation and maintenance of inventory records (food, supplies, equipment)
Monitors and assists individuals in custody with dietary work assignments
Prepares dietary operational reports as required (daily, weekly, monthly, annually)
Performs other duties as required or assigned which are reasonably within the scope of the duties enumerated above
Requirements:
Knowledge, skill, and mental development equivalent to completion of four (4) years of college with courses in nutrition, dietetics, or food service management
Three (3) years of progressively responsible administrative experience
Possession of either: a) Certification as a Registered Dietitian with the Academy of Nutrition and Dietetics, Commission on Dietetic Registration, and in accordance with the rules set forth in the Illinois Administrative Code Title 68, Chapter 8, Subchapter b, Part 1245: Dietetic and Nutrition Practices Act
OR, b) a Food Service Sanitation Certificate issued by the Illinois Department of Public Health, or requires possession of a Certified Food Protection Manager (CFPM) certification from a program accredited by the American National Standards Institute (ANSI) Conference for Food Protection (CFP)
Ability to pass the IDOC/IDJJ background check
Ability to pass a drug screen
Ability to file a Statement of Economic Interest
Ability to abide by all vaccine and/or other medical standards as set out by the employer
Required to utilize digital technology, tools, platforms, and processes in managing and supporting various digital enhancements
Nice to have:
At least three (3) years of professional experience directing and managing all operations related to Dietary Services for a public or private organization
At least two (2) years of professional supervisory experience assigning work, providing guidance to subordinates, recommending counseling and/or discipline following collective bargaining unit agreements, training staff, preparing and signing performance evaluations and approving time off
At least two (2) years of professional experience meeting deadlines with strong attention to detail
At least two (2) years of professional experience developing and interpreting policies and procedures for public or private organizations
At least two (2) years of monitoring and directing the development and implementation of a comprehensive in-service training program or staff in a food service program for a private or public organization
At least two (2) years of professional experience preparing implementation of plans of correction in response to dietary audit and survey findings for a public or private organization
At least two (2) years of professional experience communicating with both internal and external stakeholders in oral or written form daily ensuring detailed and critical analysis of work performed
At least two (2) years of professional experience with Microsoft Office Suite, including Word and Excel, or similar software
At least two (2) years of professional experience with the SAP platform
At least one (1) year of professional experience advising individuals of hazardous situations, how to correct or eliminate them, and to prepare ad hoc reports for management
