Job Description:

Exhibits culinary talents by personally performing tasks while assisting in leading the staff and managing all food related functions. Works to continually improve guest and employee satisfaction while maximizing financial performance. Assists in supervising all kitchen areas to ensure consistent, high quality product. Responsible for guiding and developing staff including direct reports. Areas of responsibility comprise overseeing all food preparation areas and support areas.

Job Responsibility:

Assist in leading kitchen operations for property
Provide direction for day-to-day operations
Supervise and coordinate activities of cooks and food preparation workers
Develop and implement guidelines for purchasing and receiving areas
Manage department controllable expenses including food cost, supplies, uniforms and equipment
Provide direction for menu development
Monitor quality of raw and cooked food products
Ensure compliance with food handling and sanitation standards
Prepare and cook foods of all types
Ensure exceptional customer service
Manage and conduct human resource activities including training and performance appraisals

Requirements:

High school diploma or GED
6 years experience in culinary, food and beverage, or related professional area
OR 2-year degree from accredited university in Culinary Arts, Hotel and Restaurant Management, or related major
4 years experience in culinary, food and beverage, or related professional area
Food handling and sanitation certifications
Understanding of menu development
Knowledge of purchasing, receiving and food storage standards
Leadership and team management skills
Financial/business decision making ability
Interpersonal and communication skills
