Title: Deli Supervisor - Macs Place Deli. OBJECTIVE: To assist the Deli & Bakery Manager with the day-to-day operation of the hot & cold deli’s and the fresh food offering on-site. To assist the Manager in ensuring delivery of all delicatessen and fresh food targets (in terms of Food Quality, Customer Service, Sales, Costings, Profitability and compliance with Hygiene Standards) through the effective management of the delicatessen and bakery area and its personnel.
Job Responsibility:
Assist the Deli & Bakery Manager with the day-to-day operation of the hot & cold deli’s and the fresh food offering on-site
Assist the Manager in ensuring delivery of all delicatessen and fresh food targets (in terms of Food Quality, Customer Service, Sales, Costings, Profitability and compliance with Hygiene Standards) through the effective management of the delicatessen and bakery area and its personnel
Ensures the deli area provides a variety of fresh, well presented, and of the highest quality foods at all times of the day whilst operational
Ensure delicatessen standards are consistently improving in terms of sourcing new products, housekeeping, merchandising, presentation and customer service
Plan for market changes and demands as they arise – seasonality and local activity
Ensure delicatessen promotions are managed appropriately with adequate costing analysis
Ensure all customer complaints are dealt with in the appropriate manner
Ensure overall customer service levels within the area are maintained at the required standard and up-selling of add-on items where possible
Assist the Deli Manager with operation of deli to meet pre-set food cost targets through staff training, portion control, waste control, etc
Assist in managing and planning the internal cleaning program to consistently meet QSC requirements
Ensure overheads are controlled and minimised where appropriate through effective management of the area
Ensure delicatessen and bakery sales are maximised through effective supervision of the area
Assist in ensuring delicatessen margins are managed appropriately and profitability of the area is maximised
Promote sales within the delicatessen area & achieve sales targets as established by the store manager
Maintain training records and ensure refresher training is provided to personnel in the area as appropriate
Managing the performance of the delicatessen area
Ensure the delicatessen team is motivated
Ensure the delicatessen team comply with requirements of the area in terms of hygiene etc
Assist the Deli Manager with staff rostering to ensure adequate cover within pre-set labour targets
To undertake other additional duties as may be assigned by the Deli & Bakery Manager and Site Manager
Requirements:
Involved in the recruitment process, training, and cross-training of effective and efficient customer-focused personnel
Ensure HACCP standards are implemented and record sheets are maintained according to requirements
Assist with food ordering from approved suppliers to meet deli requirements
Assist in recruitment, training and development of high-quality personnel for the delicatessen area
Ensure effective & compliant HACCP control systems are in place
Ensure policies and procedures about fresh food are implemented and managed
Ensure the area operates within relevant legislation in terms of HACCP
Ensure all relevant record sheets are completed
Ensure you are up to date on all aspects of HACCP and food safety and hygiene requirements
Assist the Deli Manager with stock control, dating, and stock rotation
Contribute to menu planning & development to ensure a variety of choices
Ensure that pre-agreed menus are adhered to and planned for
Assist in ensuring effective stock control systems are in place ensuring stock is rotated accordingly and out-of-date stock is discarded appropriately
Ensure wastages in the delicatessen area are maintained at a minimum level through effect management of the stock
Identify areas of stock leakage and ensure effective systems are in place to minimise stock loss
